Fermented Probiotic Soda

This is one of my favourite recipes to make year round. It’s a gut-healthy probiotic, slightly fermented, super delicious fruit soda that is so easy to make.

All you need is a well-sealing jar (preferably at least a litre), a handful of fruit including a lemon or lime, and some sugar or honey! I made mine with some plums, raspberries, rose petals and a lemon, as well as some mulling spices for a bit of an extra flavour kick.

Recipe…

  • 1 cup sugar or honey to ever litre (so if you have a 2 litre jar you’ll need 2 cups of sugar)
  • a few handfuls of fruit (apples, blueberries or anything you like!) you can also add ginger or other herbal roots (think traditional dandelion and burdock soda)
  • Filtered water. If you don’t have a water filter just boil the water first and let it cool

Add your fruit and sugar to the jar and pour the water over top. Make sure it is well sealed then give it a good shake till the sugar has fully dissolved.

Let ferment for about 5 days. The longer you leave it, the more it will ferment, and the less sweet it will become. The one I’ve made here is 3 days old, and you can see the fruit being broken down by the fermentation process.

Give it a bit of a shake each day. Its very important that you “burp” the mixture every day to let the gasses escape, otherwise you will have a fizzy mess on your hands when you do finally open it!

Also note that the fermentation process makes this drink very slightly alcoholic. It’s not enough to get you drunk, but the longer you leave it the more alcoholic the drink will become. This happens because the bacteria feed on sugars to create the fermentation, and alcohol is a byproduct of this.
